Blend coconut chips in food processor or blender (optional but I personally don't like them in huge chunks).
Mix the oats, coconut chips, flax seed, sunflower seeds, sesame seeds, and chia seeds in a bowl.
Add peanut butter, honey, vanilla and mix well.
Let them sit in the fridge for half an hour.
Using an ice cream scoop or your hands make them into small balls.
Store in the refrigerator in an air tight container.
